Beetroot is a cultivated variety of beet (Beta vulgaris). We task our Farmers to harvest our beauties when they are about an inch in size, so they really are babies. We find that ensures our baby beets are, because of their youth, more tender then their grown up siblings and have a finer texture. Fortunately parts of England offer the perfect conditions for these little lovelies - the sun, soil and water combine to produce the sweetest, earthy little beets just right for preserving.
So as not to over power their distinctive earthy charm we have used a delicate high quality red wine vinegar and just a splash of orange juice to create the perfect pickle. Excellent with salads – try them with feta cheese, in sandwiches, as a twist to a ploughman’s or like our antipodean friends with your burgers.
