Raspberry Preserve

The raspberry, a member of the genus Rubus that also includes blackberries and dewberries has a divinely intense sweet taste and is a favourite berry for many. Being that they grow well in cool, damp conditions it comes as no surprise that they are a cottage garden and allotment favourite in England, in fact it would be interesting to know how many of them make it from the plant to the kitchen and how many get eaten on the way.

We use perfectly ripe raspberries lovingly hand selected when they are bursting with flavour and craft into a delicious preserve. Long established as the essential ingredient for the afternoon tea classic  - the Victoria Sponge, also perfect with crumpets or toast and delicious in jam tarts – anyone for tea, or breakfast or lunch?
