Red Onion Marmalade
The onion (Allium cepa) is the most widely cultivated species of the genus Allium and it is thought they have been in cultivation for at least 7,000 years. They are a treasured bulb throughout the world and have been accredited with many medicinal properties, ever had someone suggest you should eat raw onions to ward off a cold?
We take the seasons beautiful crisp red onions and slowly, very slowly to make sure that we extract the very best natural flavours, we caramelise them with brown sugar and red wine to create a deliciously soft, sticky sweet treat with oodles of taste. Ambrosial with pates and terrines, dolloped onto grilled goats cheese or even added to sausage casseroles or pot roasts.
