Rhubarb (Rheum rhabarbarum) can start life in a pretty mean way, being forced to send its shafts of sweet, tender yumminess skywards in search of light! Yet they still manage to keep their chins up and be the delicious, brightly coloured, tart vegetable that whispers ‘Spring is on its way’ in the winter gloom.
We delicately spice ours with cinnamon, nutmeg and cloves to really temper the sharpness and then add a generous splash of Cider vinegar to create truly scrummy Chutney. Super with all cheeses, hams, pies or smoked fish indoor or al-fresco. Try reheating gently and whacking a dollop onto a gammon - delish!
