Summer Berry Compote
A soufflé is supposed to be one of the most daunting things to make, we would counter in that making a compote that retains the consistency and flavours of all the delicate summer berries is fairly daunting. How to create a mixture of what is essentially stewed fruit whilst still capturing the ‘summeriness’ and not to over sweeten posed us some problems. We think we managed it.
We use hand selected summer berries – blackberries, black currants, strawberries, raspberries and redcurrants, imaginably the fruits of a forage around a beautifully tended allotment or garden. Blended with just a smidge of sugar to offset any sharpness and gently cooked to retain texture and taste. Perfect thrown over meringue and cream, used in a summer pudding or just spooned over yoghurt. Mmmmm Summer in a jar.
